Roasted Veggie Roll-Ups with Quick Garlic Aioli Sauce
1 red pepper, cut into 2-inch chunks 1 green pepper cut into 2-inch chunks 1 bunch scallions (white and tender green parts) 1 large sweet onion such as Vidalia cut into 2-inch chunks 2 medium zucchini, cut into 1” discs 2 large carrots, peeled and cut into 1” slices 1 bunch asparagus (3/4 – 1 pound), rinsed and white woody ends snapped off 2 tablespoons extra virgin olive oil Sea salt 1 teaspoon balsamic vinegar 8 8-inch whole grain tortillas 16 1”x 4” thin slices Dubliner or Fontinella cheese (extra sharp cheddar will do in a pinch) Quick Garlic Aioli Sauce (see recipe below)
1. Preheat oven to 425 degrees. 2. In a large bowl, combine all vegetables and drizzle with olive oil; toss gently until coated. 3. Place on 2 large low rimmed baking sheets and place in oven swapping pans every 10 minutes until all vegetables are tender and browned; about 20-25 minutes. 4. Remove from oven and gently remove vegetables from pans; place in same large bowl (no need to rinse out). Immediately sprinkle with sea salt and balsamic vinegar; toss gently. Let cool slightly. 5. Lay out 8 tortillas on counter and spread approximately 1 teaspoon of Aioli sauce down middle of tortilla; lay vegetables over sauce; lay cheese on top and roll up. Place on serving platter seam side down.
Quick Garlic Aioli Sauce
½ cup light mayonnaise or olive oil mayonnaise – Hellmann’s is a great choice 1 small garlic clove, crushed (about ¼ teaspoon) 1 teaspoon fresh lemon juice 1-2 shakes of ground cayenne pepper Salt and pepper to taste ½ teaspoon Dijon mustard (optional)
1. Mix all ingredients in a small bowl. Keeps in refrigerator for up to 2 weeks.
