Ma’s Quick Sauce
2 tablespoons extra virgin olive oil 1 medium onion, chopped 3 large garlic cloves, crushed 1 (28 ounce) can petite diced tomatoes ¼ cup chopped fresh parsley (optional) 1 teaspoon dried oregano ½ teaspoon dried basil ¼ teaspoon salt (taste first before adding) Freshly ground black pepper Few shakes of cayenne pepper flakes 1 medium garlic clove, crushed
1. In large skillet, warm olive oil over medium heat. Add onion and sauté for 5 minutes or until onion is just brown around the edges. Add 3 cloves crushed garlic and sauté for 30 seconds. 2. Add tomatoes, parsley, oregano, basil, salt, pepper and cayenne pepper. Simmer for 25 minutes, stirring occasionally. Turn off heat and add 1 medium garlic clove crushed. Serve over 1 pound of pasta, with fish, chicken or beef steak.
